A hot sauce is a critical augmentation to certain dishes (foods). My must have hot sauce list includes, but is not limited to, eggs (prepared any way), scrambled tofu, home fry potatoes, most any meat analog, burritos, and the newest foot soldier, potato salad (especially Potato Salads that lean to the sweeter side).  A balance of sweet and savory is what we are attempting to achieve.  Our palette tips in favor of savory most of the time.   

My introduction to the IKC JD’s hot sauce was at Lincoln Diner while enjoying my Saturday favorite, two light poached eggs, extra home fries, and rye toast. IKC is the house hot sauce at Lincoln Diner, Ithaca NY. By now most of you know that Kombucha is my daily elixir biome fix. I prefer Brew Doctor Superberry or clear mind. Kombucha is oft-overlooked for its delicious taste, especially when one’s introduction is from a homebrew novice. My recommendation is trying Brew Doctor Superberry or Synergy Watermelon Wonder Kombucha before you sample a Kombucha homebrew from anyone.  A quality baseline is important when stepping into uncharted culinary territory.  

This IKC JD’s hot sauce has a most desirable, unique flavor.  I was smitten from the start.  This hot sauce is savory with just the right amount of pepper. The added kombucha provides a perfect palette note of vinegary tang.  This is now my go-to hot sauce.   IKC hot sauce has now taken the top spot from Cholula Chipotle Hot Sauce. In 2013, while working in a local gym as a personal trainer, Joey “JD” Durgin noticed many of his clients sipping on kombucha. A kombucha enthusiast himself, Joey made small gallon batches at home and dared his clients to compare his unfiltered, raw, kombucha to the store-bought stuff. “Oh my God, can I buy this from you?!” one client inquired. Word spread and his production of kombucha increased to 20 gallons at a time. But Joey’s wife was not pleased with the office being turned into a home brewery.

We created the first-ever kombucha BBQ sauce using kombucha vinegar that was too strong to drink, but perfect as a base for a sauce. A bottling company and a very talented graphic designer/photographer/kombucha fan Jenn Foy came on board and we created our first batch of BBQ Sauce on May 11, 2015. Soon after, Joey created JD’s Hot Sauce. Our small company is growing slowly and surely, and we are now expanding to all stretches of NYS!

Joey and Brian are launching their first Infinity Kombucha Brewing Kit that carries the name of their Personal Training Studio (Infinity Athletics). Named Infinity Brewing Kit because you buy the kit once and you never have to buy Kombucha again! Well, unless you drink it all then you might while you’re waiting for the next batch to brew.
